Black Bean & Mushroom Burgers

Introducing today's lunch:
                                           
Black Bean & Mushroom Burgers
2 c. Black beans
1 c. Mushrooms
Blend these together in blender until somewhat pasty
Add 1 c. homemade bread crumbs (or breadcrumbs of your choice)
3 Tbs. Flax meal & 2 Tbsp Hot water
1/4 tsp. cumin
a 1/4 cup diced red pepper
pinch of sea salt & freshly ground pepper

Saute in a little olive oil in pan on each side for about 3-4 minutes



Serve with Mashed potatoes, veggie side and this awesome vegan Gravy from "30 Minute Vegan"

Mushroom Onion Gravy
1/4 cup WW Flour (or spelt)
1/4 cup + 1 Tbs safflower or olive oil
1 cup thinly sliced yellow onion
1 Tablespoon minced garlic
1/2 cup Thinly sliced shiitake mushrooms
2 1/4 cups water or vegetable stock
1/4 cup nutritional yeast
3 Tbs soy sauce
1 Tbs minced fresh italian parsley (or dried)
1/4 tsp. ground nutmeg
1/4 teaspoon sea salt or to taste
1/4 teaspoon black pepper or to taste

1. create a roux by combining the flour and 1/4 cup of oil in a small bowl and whisking well.
2. place the remaining tablespoon of oil in a saucepan over med-high heat. Add the onion, garlic and mushrooms and cook until onions are translucent, about 5 minutes, stirring frequently. Add the water and bring to a boil.  Lower the heat to a simmer and add the nutritional yeast, soy sauce, parsley, nutmeg, stirring frequently.
3. Add the roux and stir constantly until the sauce thickens, about 3 minutes. Add salt and pepper to taste.
